White Trash Cooking

September 12,
The term "white trash" was originally used by slaves in the s to describe poor whites. Nowadays, it is used as a pejorative for poor, uneducated Southerners. In his introduction, Mickler describes "White Trash" - distinguished from the "common white trash" who lack pride and manners - in this way:

we are "in love" with our bad times and weakest characters, we laugh at our worst tragedies, and with a gourmet's delight enjoy our simplest meals.

I was unsure of what to expect from this book. As one Goodread's friend asked, "I'm betting a lot of the White Trash cooking involves Ritz Crackers, eh?" Well, yeah. They're there. And Campbell's Cream of Mushroom Soup rears its ugly head a few times. Also Jell-O. But the recipes are not awful. Mama Two's Pralines sound seriously yummy. Sloppy Joe's on Cornbread? Mmmm-mmmm. And I definitely want to try this Jail-House Chili. It uses 6 TABLESPOONS of chili powder. My current recipe uses one.

White Trash cooking is a "kissin' cousin" to Soul Food, but what sets it apart from other kinds of cooking are three ingredients - saltmeat, cornmeal and molasses. An iron skillet is as important to the

White Trash Cooking: 25th Anniversary Edition [A Cookbook]

More than recipes and 45 full-color photographs celebrate 25 years of good eatin’ in this original regional Southern cooking classic.

A quarter-century ago, while many were busy embracing the sophisticated techniques and wholesome ingredients of the nouvelle cuisine, one Southern loyalist lovingly gathered more than recipes—collected from West Virginia to Key West—showcasing the time-honored cooking and hospitality traditions of the white trash way. Ernie Mickler’s much-imitated sugarsnap-pea prose style accompanies delicacies like Tutti’s Fancy Fruited Porkettes, Mock-Cooter Stew, and Oven-Baked Possum; stalwart sides like Bette’s Sister-in-Law’s Deep-Fried Eggplant and Cracklin’ Corn Pone; waste-not leftover fare like Four-Can Deep Tuna Pie and Day-Old Fried Catfish; and desserts with a heavy dash of Dixie, like Irma Lee Stratton’s Don’t-Miss Chocolate Dump Cake and Charlotte’s Mother’s Apple Charlotte.

After Jargon took the book on, they began raising the money to print the thing. But more than a year later, Woolcott grew frustrated with Jargon’s glacial process, so he bought two tickets to Winston-Salem to crash the publisher’s next board meeting. Mickler and Woolcott arrived as Jargon was hosting an art opening. Ernie felt out of place among the art snobs. But soon enough, someone screamed at Ernie, “I’ve seen you in drag!” And in a moment, the purported pretension fell away.

At the meeting the next day, a portion of Jargon’s board members sat around the table with Ernie and Woolcott. After a bit of circumspection, they agreed to table the book for another year due to a lack of money, but Woolcott stood up and said, “If you people don’t print this book, I’m going to print it myself.” Woolcott offered $2, and typesetting right there. Then, Philip Haines — maybe the book’s most ardent and unsung supporter — put down $5,, followed by $10, from Don Anderson, an oil magnate. That day, $25, came to the fore, and ‘WTC’ finally reached escape velocity.

On February 19, , Woolcott and a group of friends hosted a release party for “WTC” at the Oasis. The culmination of 14 years of Er
